Jean-Paul JP Trijsburg Chardonnay Viognier Crafted from a mix ofJean Paul Trijsburg Chardonnay is crafted in a Northern French inspired style, with fruit picked early to preserve natural acidity and freshness. The grapes are gently pressed and fermented using indigenous yeasts in a new 1000 litre French oak vat, followed by eight months of maturation in oak to build subtle complexity and texture. The palate is medium bodied and finely poised, shaped by a mineral driven core and a moreish, gently savoury edge.
